Ludo (who lives in Crymych) started cooking from a young age to make food interesting for his mother who had leukemia. She was also an excellent cook and this was instilled into Ludo. He knew fairly early on that this is the path he wanted to follow and started working in various restaurants in France. He then decided he would like to travel the world and learn English and so went to an agency in Paris who sent him to Maes y Neuadd in Harlech. Here he spent 4 happy years working under chef Peter Jackson who was head of the Welsh culinary team. The big city beckoned and he moved down to Cardiff to work as a pastry chef in Le Gallois, a restaurant which had two AA rosettes and an excellent reputation. Ludo is now head chef in the Harbourmaster in Aberaeron which, not surprisingly, given its location, specialises in fish and local produce.
